Tiny Cupcake Bites

My nephew and godson, Matt, has been begging me to make my Mini Cupcake Bites for almost 2 years.  It's not that I don't love them, it's just that they take time to make.  And since Clara was born, I just don't have that kind of time.....unless it's for Matt's 16th birthday!

I surprised Matt with nearly 100 of these little bites of heaven on our family's annual vacation.  Happy birthday to my favorite godson!
